Green beans with Shiitake Mushroom and Bacon

Green beans with Shiitake Mushroom and Bacon

Ingredients

What you need

  • 1 lb. green beans, ends trimmed
  • ½ lb. shiitake mushroom
  • 5 strips bacon, chopped
  • 2 garlic cloves, minced
  • Sea salt and freshly ground black pepper to taste

Serves 4-6.

Method

How to make it

Soak the mushrooms in water for 5-10 min. Remove from the water, squeeze out the excess and chop into thin strips. Fill a large pot with water and salt and let come to a rapid boil.

Blanch the green beans for 5-7 min., until tender but firm. Transfer to an ice bath to stop cooking. Strain when cold and let dry.

In a large skillet, brown the bacon over medium heat with some oil. When crispy, remove the bacon from the pan and increase the heat. When the bacon fat shimmers, add the mushrooms and sauté over high heat until browned.

Reduce the heat and add the garlic while tossing the contents of the pan. After a minute, add the dried beans to the pan and reheat while stirring occasionally. When hot, return the bacon to the pan, toss, and serve immediately.
