Daniel’s Swedish MeatballsOats soaked in cream, grated yellow onion, allspice and paprika, browned in nut-coloured butter. Serves 6–8.
Spicy Tuna Tartare in Cucumber CupsSushi-grade ahi marinated in sesame oil, ginger and jalapeño, spooned into scooped cucumber. Nothing cooked. Serves 6–8.
Moroccan Turkey Meatballs with Tahini SauceGinger, coriander, cumin and fresh cilantro, roasted rather than fried, with a lemon garlic tahini sauce. Serves 4–6.
Poppy Seed Salmon with Orange Soy GlazeOrange juice reduced and mounted with cold butter, poppy seeds on one side only. Serves 4–6.
Grilled AsparagusBlanched two minutes, shocked in ice water, charred on the grill, then marinated in lemon and garlic. Serves 4.

Why these five

A fair sample, not the easy ones

A main from my own country, an appetizer that involves no cooking at all, a roasted poultry dish, a fish course and a vegetable side. Between them they cover most of what a week actually asks for.

The book is organised the same way: starters, salads, vegetables, grains and sides, beef and pork, poultry, fish, and desserts. Two hundred and forty recipes across 216 pages, first published in 2013 and still the way I cook.
