Grilled Pork Chops with Adobo

Serves 4-6 · main course · 9 ingredients

Everything but the oil in the bowl first, then the oil whisked in slowly until it emulsifies. An emulsified marinade clings to the meat; a split one runs off into the grill.

One hour minimum, 24 if you have it. Scrape the grate, oil it with a towel, and sear before closing the lid. Serves 4 to 6.

Grilled Pork Chops with Adobo

Ingredients

What you need

  • 2 lbs. pork chops, thin cut
  • 1 tbsp. fresh lemon juice
  • 1 tbsp. white wine vinegar
  • 2 garlic cloves, minced
  • 1 tbsp. Dijon mustard
  • 1 tsp. dried oregano
  • 2 tbsp. adobo spice blend
  • 5 tbsp. olive oil
  • Sea salt and freshly ground black pepper to taste

Serves 4-6.

Method

How to make it

Combine all ingredients except the olive oil in a mixing bowl. Whisk in the olive oil in a slow stream until combined and emulsified. Check for seasoning and submerge the pork chops fully.

Let marinade for 1-24 hours. Heat a grill to high heat. Scrape the grid with a wire brush, dip a kitchen towel in some canola oil and coat the surface of the grill with it.

Sear the pork chops on the grill until nice grill marks appear. After turning the meat over, close the lid of the grill, checking occasionally until fully cooked.
