Hummus
Serves 6-8 · dip · 8 ingredients
Garlic minced first and alone, then everything else, then the olive oil in a slow stream while the processor runs. That order is the whole recipe — add the oil too early and it never emulsifies properly.
Cumin and coriander both, not just cumin. Finish with paprika and more oil on top. Serves 6 to 8.

Ingredients
What you need
- 3 cloves garlic
- 2 tsp. ground cumin
- 2 tsp. ground coriander
- 1 tsp. paprika
- 2 cans of chickpeas/garbanzo beans
- ½ cup olive oil
- Juice of 2 lemons
- Sea salt and freshly ground black pepper to taste
Serves 6-8.
Method
How to make it
Mince the garlic in a food processor. Add the other ingredients except for the olive oil. Run the processor and when well-combined, add the olive oil in a slow stream while running.
Taste for all spices and lemon juice. Place in a bowl and add some paprika and olive oil on top.
