Poppy Seed Salmon with Orange Soy Glaze
Serves 4–6 · main course · wild-caught salmon
Two cups of fresh orange juice reduced to half a cup, mounted with cold butter and tamari into a thick glaze. The salmon is pressed into poppy seeds on one side only, seared on the other, and finished in the oven.

Ingredients
What you need
- 6 square pieces wild-caught salmon, skin removed
- Poppy seeds, as needed
- 2 cups freshly squeezed orange juice
- 1 tbsp tamari or soy sauce
- 2 tbsp cold butter, or more if needed
- Sea salt and freshly ground black pepper
- Olive oil, as needed
- Canola oil, as needed
Serves 4-6.
Method
How to make it
Preheat the oven to 350°F.
Put the orange juice in a pot and reduce it down to ½ cup; it should be thick at this point. Whisk in the soy sauce, then mount with cold butter until it forms a thick glaze.
Coat the salmon with olive oil and sprinkle with salt and pepper. Pour some poppy seeds onto a plate and press the top side of the salmon only onto the plate, creating an even layer.
Heat a skillet with some canola oil until it is shimmering. Sear the bottom only of the salmon until browned, then transfer to a sheet pan.
When all pieces are seared, put the sheet pan into the oven and finish cooking to the desired doneness, about 5 to 10 minutes.
Place the salmon on a plate and pour the sauce over. Serve immediately.
