Sake and Mirin Steamed Sea Bass
Serves 4-6 · main course · 7 ingredients
A bed of tarragon, chervil, thyme and marjoram on the bottom of the dish, fish on top with space between the pieces. The herbs steam up through the fish rather than sitting on it.
Sake, mirin and toasted sesame oil poured over, covered with foil, 350F for 15 to 20 minutes. Rest a few minutes before serving. Serves 4 to 6.

What you need
- 6 pieces sea bass, skin removed
- ½ cup each tarragon, chervil, thyme and marjoram
- ½ cup toasted sesame oil
- ½ cup dry sake
- ½ cup mirin (sweet Asian cooking wine)
- Sea salt and freshly ground black pepper
- Toasted black sesame seeds, A/N
Serves 4-6.
Method
How to make it
Preheat the oven to 350°F. In a ceramic roasting pan, cover the bottom with the fresh herbs and place the pieces of fish over it with some space in between. Drizzle the sake and mirin all over the fish, followed by the sesame oil. Season with salt and pepper and sprinkle the sesame seeds on top.
Cover the dish with foil and cook in the oven for 15-20 min. until just done. Let rest a few minutes before serving.
