Soba noodles with Green Onions and Plum Vinegar

Rinse the soba the moment they are strained or they glue themselves together. That single step is the difference between soba and a brick.

Sesame oil, plum vinegar, tamari and sesame seeds go in at the very end, off heat, tossed and served immediately. Serves 4 to 6.

Ingredients

What you need

  • 1 packet soba noodles
  • 4 green onions, chopped
  • 2-3 tbsp. toasted sesame oil
  • 1-2 tbsp. plum vinegar
  • 1 tbsp. tamari or other soy sauce
  • 2 tbsp. sesame seeds

Serves 4-6.

Method

How to make it

Cook the noodles as directed on the packet with a pinch of salt. Strain and rinse immediately to prevent them from sticking together. When ready to serve, heat the oil in a skillet on low heat and add the noodles and green onion. When the noodles are hot, add the rest of the ingredients, toss the pan and serve right away.
